Tomato Pie

In the south, there is an  abundance of ripe, juicy,   delicious Tomatoes. A tomato pie is a wonderful way to use some of the tomatoes for a lunch meal or a dinner side or a side dish. Either way they are just divine. I add a clove if crushed garlic and  fresh basil In the  cheese mixture .

What you will need!

5-6 Ripe Tomatoes, Sliced and drained on paper towel
1 c. Feta Cheese
2 c. Mozzarella, grated
3/4 c. Mayonnaise

1/2 c. Parmesan Cheese, Grated
1 Clove Garlic, minced (optional) 1 pie Crust
2 tablespoons chopped fresh basil.

How to Cook!

Layer tomato slice in pie crust. Dust Tomatoes With  A Tad Of Flour Before Layering. This Will Prevent Crust Being Soggy. Combine mayonnaise, cheeses, garlic, salt, and pepper. Spread mixture over tomatoes. Sprinkle cheese on top. Bake 350° until bubbly. Also pre-baking pie shell for 10 minutes will help  Keep it crispy.

Note: Serve with Salad and cold ice tea! This is a favorite of my family. we know it's summer when tomato Pie is on the menu.
