1 c. chopped, toasted pecans
1 c. Frimly packed Brown sugar
1/2 c. all-purpose flour
2 lg. eggs
1/2 c melted butter
1/4 tsp. vanilla
How to Cook!
combine pecans, brown sugar, and flour in a mixing bowl. in a separate bowl, beat eggs until foamy. stir in butter. pour egg and butter mixture over dry ingredients and stir just until moistened. scoop batter into muffin tin lined with paper baking cups. Bake at 350° for 20-25 minutes. Cool on wire rack.
Note: I use an ice cream scoop to fill baking cups so that each muffin turns out the same size. Great with a cup of coffee.
