Gail’s Chicken Salad

I’ve been told that I make the best chicken salad in these parts. And hopefully other parts too! The trick is toasting the pecans first. My toaster oven does that job for me.That brings out their wonderful flavor. The other trick is there must be a sweet element. My number 1 choice is candied sweet pickles. They are a tad hard to find.I also use these delicious pickles in my potato Salad, ham salad,and deviled eggs.Email me if you want To know where I buy my Sweet pickles. Chopped granny smith apples is a good 2 nd choice plus some halved red grapes.I make thus recipe quicker starting with a rotisserie chicken, all white meat and dark meat chopped.I use my food processor to chop but not to fine. You don’t want baby food chicken salad!

What you will need!

3 Lg. slowly boiled chicken breasts
2 c. Mayonnaise
1/2 c. toasted chopped pecans
1/2 c. chopped candied sweet pickles

1 c. celery, chopped
1 T. sour cream
1/2 c. Granny Smth apples, chopped
1/4 tsp. salt

How to Cook!

Boil chicken slowly. when,cool and chop in food processor (not too fine) on pulse cycle. Add mayonnaise, toasted nuts, pickles, celery, sour cream, apples, and salt. add more or less nuts, mayo, salt, and sweet pickles to your taste.

Notes: I use a food processor to make my chicken salad. it make it much faster then chopping by hand. this recipe can be doubled or tripled for a large gatherings. divine served with poppy seed dressing.

  1. I have never made chicken salad before and I am a klutz in the kitchen. I would say I’m a beginner cook (and that is being generous.) This recipe was so easy to follow and everything was so easy to do. The only oops I had making this recipe was knocking over the jar of pickles, spilling pickle juice all over my pants and the floor. After tasting it upon completion, I can say I will never eat any other chicken salad again! It is absolutely incredible and can be served various ways! Thank you Gail for increasing my very limited recipe repertoire! I love this dish!
