Bean and Corn Salsa
This salsa recipe is so wonderful it is gobbled up as soon as it hits the table!I serve it with large corn chips or a sturdy cracker.
Ingredients
- 2 cans Black beans ,drained
- 2 cans white corn ,drained
- 1 red bell pepper,chopped
- 2 containers feta cheese,crumbled 4 oz each
- 1 cup apple cider vinegar
- 1 cup olive oil
- 1 bunch green onions, chopped
- 1/2 small purple onion,chopped
- 1 package splenda
- A few dashes of Tabasco or to taste
- Salt and pepper to taste
Instructions
- In a large bowl,combine beans,corn,bell pepper,,feta cheese,and tabasco .In another bowl,combine vinegar,olive oil,green onions,purple onions,splenda,salt and pepper.Add to bean mixture and stir.it is best if left in refrigerator overnight.
