Witch Finger Cookies

With Halloweeny around the corner,these witch cookies are a lot of fun and also very tasty!You can either dye them green like I did or leave them natural.In my mind witches are green,and witches also love red finger nail polish! That is easy to achieve with whole blanched almonds placed in a plastic bag with red food coloring and the laid on a paper towel to dry..

Ingredients
  

  • 2 to 3 Tbl red food coloring
  • 30-35 whole blanched almonds

Cookies

  • 2 large eggs
  • 1/4 tea vanilla extract
  • 1/2 cup confectioners suger
  • 1 stick unsalted butter
  • 5 tbls granulated sugar
  • 2 cup all-purpose flour
  • pinch salt

Instructions

  • Place 30 to 35 blanched whole almonds in a plastic bag.Add 1 to 2 tablespoons or enough red food coloring to coat almonds, and shake bag coating almonds completely..Then pour onto paper towels and allow to air dry.
  • Pre heat the oven to 350 degrees.
  • Separate 1 egg.Set aside the white.In a small bowl,whisk together yolk,remaining egg, and vanilla.Set aside.
  • In the bowl of mixer fitted with paddle,combine butter,confectioner's sugar,granulated sugar,and salt.Beat on medium speed until combined.Add egg mixture and beat until smooth.This is the point you add your green food coloring…add until you find the ghoulish color you desire .Add flour,and mix on low speed just until incorporated.Wrap in plastic,and chill for 20-30 minutes.Divide 1st half into 15 pieces.On a lightly floured surface,roll each piece back and forth with palms into finger shapes,3 to 4 inches long.Pinch dough into 2 places to form knuckles.Score each Knuckle lightly with the back of a small knife.Place fingers on baking sheet and repeat process with remaining dough.When all the fingers are done,brush lightly with egg white.I don't always do this step but I put a little egg white on tip of finger before attaching red almond.Push down on almond so it can settle into place.Bake until done ,around 12 minutes.Cool completely.
  • Divide the dough in half working with one piece at a time.Keep other section in frig.
