Broccoli cheese cornbread!

This delicious cornbread recipe came from a dear friend years ago, when I co-authored a cookbook to benefit the Greater Birmingham Humane Society. It is so good! Plus, if you added some cooked bacon you would have a complete meal!

What you will need!

1 box Jiffy Corn Muffin Mix
4 eggs
1 stick of butter
1 chopped onion fine
¼ teaspoon salt

1 cup grated sharp cheese
1 1/2 TEASPOONS SUGAR.
1 cup grated sharp cheese
1 bunch of steamed and chopped broccoli

How to Cook!

In a cast iron skillet, saute’ onion in butter. Mix corn muffin mix with eggs, cooked onions, broccoli, salt, and cheese. Put the mixture in a hot cast iron skillet and cook at 425 degrees for 20 minutes. Let it cool just a little before cutting and serving. Add a piece of butter and wait for the cheers to start!
