ITALIAN PASTA

This pasta salad is perfect for a crowd. It makes a ton and lasts for days. You can add red bell peppers or celery or another other vegetable your family likes. I  always  double  Italian Dressing because the pasta soaks up the dressing. I add more just before serving to family and friends. It is D- lish!

What you will need!

1 8 OZ.BOX OF ROTINI PASTA - COOKED AL DENTE DRAINED AND RUN UNDER COLD WATER UNTIL COOL.
10 OZ.OR 3 CUPS CHERRY TOMATOES SLICED
6 OZ SLICES SALAMI IN STRIPS
1/2CUP DICED CUCUMBER

1 CUP COOKED CORN[COLD]
1 MEDIUM RED ONION FINELY CHOPPED
8 OZ.MOZZARELLA PEARLS
1/2 CUP BLACK OLIVES PITTED AND SLICED
1/2 CUP ROASTED RED PEPPERS IN JAR, FINELY CHOPPED, 1/3 CUP FINELY CHOPPED FRESH PARSLEY…

How to Cook!

PLACE COOLED PASTA IN A LARGE BOWL AND LAYER ALL INGREDIENTS…ANY OF THESE INGREDIENTS CAN BE OMITTED.MY FAMILY WONT EAT OLIVES SO I LEAVE THEM OUT..ADD OTHER VEGETABLES YOU LIKE.DRESSING;I DOUBLE THIS RECIPE..I USE HALF AS SOON AS MADE AND RESERVE THE REST UNTIL IT IS SERVED…THE PASTA ABSORBS THE DRESSING..1/2 CUP EXTRA VIRGIN OLIVE OIL,3 TABLESPOONS WHITE WINE VINEGAR,1/4 CUP GRATED PARMESEAN CHEESE,1 TABLESPOON MAYONNAISE,1 TEASPOON SUGAR,1 FINELY GROUND GARLIC CLOVE,1/2 TEASPOON OREGANO,1/2 TEASPOON BASIL,1/2 TEASPOON PARSLEY,1/2 TEASPOON BLACK PEPPER,AND 3/4 TEASPOON SALT…..MIX THE DRESSING WELL.IT WORKS NICELY IN A JAR WITH A LID THAT YOU CAN SHAKE.THIS SERVES A LOT AND IS A CROWD PLEASER!
